Spicy Glass Noodle Salad


Ingredients:

- 1 big green lime (juice only)
- 2 bird eye chili (up to individual spicyness.)
- 2 tbsp fish sauce
- 2 tbsp stock (from the boiling prawn and minced chicken)
- 2 tbsp sugar
- 6 prawn (up to individual to have more or less. Peel shell n head)
- 4 tbsp minced chicken
- beansprouts (up to individual to have more or less)
- cherry tomato (up to individual to have more or less)
- 1 red onion
- 3 stalks chives (cut to chunks)
- glass noodle/ vermicelli (up to individual to have more or less)

Dressings:

Add lime juice, fish sauce and sugar together.  Stir well and add in the stock and lastly the bird eye chili.

Directions:

Use pan/ pot, add in 2 or 3 cups of water. Boil the prawns first for 5 minutes or until it turns orange/ pink/ harden. With the same pan/ pot, add in the chicken. Cooked for 5 minutes or until it turns white. Use another pot and boil the glass noodle/ vermicelli for 7 minutes or until it turns clear. Drench prawn, minced chicken and glass noodle/ vermicelli well with no excessive water.
Slice the onion and chop the chives. You can slice the onion thinly or in chunks. Add in beansprouts (wash and dry), cherry tomato, prawn, minced chicken and glass noodle/ vermicelli in a bowl. Lastly, add the dressings in and stir well.
